So naturally, I had to do it. I mean, how can you not eat dandelions after learning that the entire plant is edible? I went outside, and I immediately plucked a fresh dandelion leaf. I chewed.
I almost spit it out.
Yeah, it was probably the most bitter thing I've ever tasted. Not exactly something I'd like to eat daily. I'd prepare a violet salad instead, if given the opportunity. Now that's yummy!
I decided to eat dandelion, though, and darn it! I was going to do it.
So there!
I thought about the many recipes I had seen floating around the web, and I remembered that one of those recipes was a dandelion stir fry. That's an easy thing for me to accomplish. I make a pretty decent basic stir fry all the time.
So I got out my ingredients.
Yes, comparatively speaking there is a very small amount of dandelion in this stir fry, but I just didn't have the heart to make my husband and daughter eat something that had a large chance of being, well, gross. The dandelion leaves, therefore, were all placed on my plate, and they got the "normal" stir fry ingredients.
At last I had finished making dinner, and the moment of truth had arrived. I stared at my plate, crossing my fingers in hope that cooked dandelion was better tasting than raw.
I took a bite.

It was good!!! The stir fried leaves had an unusual (but pleasant) texture, and were no longer bitter. Well, ok... there was a slightly bitter flavor to them, but the bitterness was no longer overwhelming.
I could definitely do this again. I just need to remember that while raw dandelion leaves are unappealing to me, dandelion stir fry is pretty awesome!
